Cindy Buchanan, Concessions Manager

We need you in the concession stand!

Thank you to all for volunteering your time when called upon! The concession stand is a vital part of our Club and provides revenue for funding the many programs our student athletes participate in. Working a shift or two is a great way to give back to the athletic program and requires only a few hours a year. So, please, the next time your Sports Rep contacts you to help in the concession stand, say yes. It takes all of us to make it work!

A schedule of volunteer concessions assignments for remaining home games has been posted for your convenience. If opening, please refer to the opening procedures. If closing, take a look at how to close.

(schedule is subject to change, so please check back for updates)

Never worked in one of our concession stands before? It's easy. Here are some handy tips:

If you're in the opening slot (1st shift) for the stadium and Valley Field House concession stands

  • Familiarize yourself with the area you've been assigned to (i.e., taking money, making nachos, popping corn). The concessions manager will give you detailed instructions on how to manage your area. Ask questions if you do not understand.
  • If popping corn, follow recipe given to you by the manager. Turn off the machine when not in use. When popcorn is running low, make a couple of more batches. When the game/meet/match winds down, do not make any more popcorn.
  • If manning the nacho and/or chili sauce machine, fill the smaller compartment of the nacho tray to the top with sauce. No need to open the nacho package, just place chip bag in the nacho tray. If you start running low on either sauce, contact the manager to have the bag changed (unless there is someone in your group that knows how to do it).
  • Hot dogs (regular, Nathan's or brats) should already be cooking on the rollers by the time your arrive. When they reach their desired temperature (140 degrees), place the dogs in a bun and foil. Keep warm in drawer below rollers (the warmers should be set at 140 degrees). Replace cooked hot dogs with fresh ones from the refrigerator.
  • Counter help - note food item prices. Replenish candy as needed. Extra boxes are on various shelves in the stands. If warm outside, chocolate candy bars may be in the cooler. We sell Pepsi products - they are sorted by flavor. Gatorade flavors will vary; be sure to check out what we have on hand.
  • Counter help, part II - when attendance numbers are high, so are our sales. Keep the quarter supply flowing and make sure you have plenty of ones. If the manager hasn't told you, be sure to ask where the extra quarters and $1s are.
  • Counter help, part III - put out condiments (ketchup, mustard and relish) on counter along with napkins.
  • In certain stands, we sell coffee, hot chocolate and cappuccino. If assigned to that area, watch what comes out of the spout! If the stream starts looking more like water than a brown liquid, it means you need more mix. The mixes can be found in boxes by the hot chocolate machine. Just open up the appropriate top of the machine and pour the powder mix in.
  • For certain events, we sell pizza. Pizza is served on a plate (we use Happy Joe plates). Pizzas come as cheese, sausage or pepperoni.
  • FOR EVERYONE - when the 2nd shfit comes in, find someone to take your spot and train them before you leave!

If you're in the closing slot (2nd shift) for the stadium and Valley Field House concession stands

As the game/meet/match begins to wind down:

  • Popcorn area - bag remaining popcorn. Clean out popcorn bin and dump the "old maids" in the trash (old maids are collected in a bin below the popcorn bin). Once the game is over, discard any unsold popcorn. Make sure popcorn oil is tightly sealed, as well as the Flavocol. The lid for the popcorn tub should also be placed tightly. Place used utensils in the sink.
  • Nacho area -locate the cap for the nacho and/or chili sauce bags. Open the nacho and/or chili sauce machine lid and gently separate the bag from the machine. Remove the plunger from the bag (be careful - sauce may squirt out!) and replace it with the cap. Place bag in the refrigerator. Thoroughly rinse the plunger and wipe down any nacho residue from the machines. Unplug the machines from the electrical outlet (there is no on/off switch). Wipe down area.
  • Hot dog area - wrap all remaining cooked hot dogs and place in warmers. Turn off the hot dog rollers, but keep the warmers running at the proper temperature. Once the game is over, hot dogs should be discarded and warmers turned off. Wipe down area and put used utensils in the sink.
  • Counter area - clear counter of condiments and napkins. Wipe down counter with cloth and cleaner. Collect cash drawers and consolidate bills and coins into one drawer and separate into monetary designations.
  • Hot chocolate area - wipe down area.
  • For everyone - since everyone likes their pop and water to be cold, please help the counter team replenish the pop, water and Gatorade. Extra pop can be found in the tall coolers. Be sure to rotate beverages so the warm items are underneath the cooler ones.
  • For everyone, part II - sweep your area.
  • All trash, including the big brute, boxes and pizza boxes, should be left outside the concession stand door.

Go Tigers!
